Glamorgan Patties recipe

Ingredients & Quantities

  • 210g of Fresh White Breadcrumbs
  • 250g of Cheese
  • 90g of Onions
  • 1tsps of Nutmeg
  • 2tsps of Salt
  • 1tsps of Pepper
  • 4 Eggs
  • 90g of Breadrcumbs (for coating)

Method

  1. Mix together the fresh breadcrumbs, grated cheese and chopped onion. Add the nutmeg and seasoning.
  2. Separate half the eggs, put to one side and use the yolks and remaining eggs to bind the dry mixture together.
  3. Divide the mixture in to portions and mould each portion in to a round fish cake shape.
  4. Beat the remaining egg whites until they are frothy but not stiff.
  5. Dip the patties in to the egg whites and then coat with breadcrumbs. Put on to tin lids and brush with oil.
  6. Bake at 375F/190C for approx. 30 minutes until golden.
  7. Serve hot with tomato and basil sauce.
