Ingredients & QuantitiesÂ4 oz Butter                           2 oz caster sugar 4 oz SR flour                       pinch of salt 4 oz fine semolina or ground rice MethodCream the butter very well in a bowl. Mix the remaining ingredients together and gradually add to the butter. Knead into one piece on a pastry board. Roll out between two sheets of greaseproof paper to less than 1/4 inch thickness. Cut into rounds with a fluted cutter and bake for 15-20 minutes at 350F/160C. Sprinkle with a little caster sugar.
